Rodolphe Frerejean-Taittinger, CEO and R&D Director, guides the winemaking process and draws on his decades of experience in the champagne and cognac fields. This innovative approach prioritizes wine quality well before the elimination of alcohol, redefining the principles of winemaking and broadening its horizons. The process begins with a careful selection of organic Chardonnay grapes from partner vineyards in the Languedoc region. Priority is given to hillside plots, where concentration and complexity of aromas flourish. The grapes are harvested two weeks earlier than usual in the region, which guarantees an optimal concentration of acidity.
