Carl Jung was born into a family of winegrowers in Rheingau (Germany) who wondered if wine could be enjoyed without alcohol. Already in 1907 he developed a process of vacuum extraction of alcohol, gently eliminating it at temperatures below 30 degrees and recovering the natural aromas of the wine. This way it preserved the bouquet and flavor. He was the inventor of non-alcoholic wine.
